Raw Borage Honey
Raw Borage Honey or Vipers Bugloss (borago officinalis) is collected from the blue borage bush mainly on the South Island of New Zealand. Raw Borage Honey has a very delicate floral bouquet with a pleasant, mild, herbal scent and tastes great in tea, on toast, scones, and biscuits or in a BBQ Sauce! Raw Borage Honey has high fructose levels.
Raw Borage Honey is also considered to be a type of medicinal honey to help relieve stress and fatigue, but is not as medicinal as manuka honey. Even though Raw Borage Honey is a creamed honey, the nectar can easily separate from the creamed honey to the point that it looks like 50% nectar and 50% solid honey mass. This separation of firm and liquid mass happens in a fairly short time frame. There is nothing to worry about, just mix the honey well until it is smooth and creamy. You can store it in the refrigerator if you prefer the honey firmer.
